Hello! How’s everyone’s Monday been? Mine was pretty good. I’ve been very productive today! I ran, went to class, studied, made a new recipe, watched last night’s episode of Extreme Makeover: Weight Loss Edition, and I’m probably going to end it with studying. I took my first quiz today in my Organic Chemistry II class, and I feel like I did pretty well. Maybe it was my run that helped me out?
Today was my first day in quite a while that I’ve woken up early to go run. I didn’t go for very long because I ran 5 miles yesterday and my legs were a little sore, but I’m so glad that I did get up because it definitely set a good mood for the day. I’ve also been more productive so I’m going to continue to get up before class to run.
Anyways, let’s go back to this weekend. I only have class from Monday through Thursday, so I headed back home on Thursday afternoon. Friday, I had to work from 9-4, and then I helped babysit. Saturday, I babysat for a couple of hours, went running then I went to the J Crew outlet to try to find some denim shorts. I like checking out the outlets because I can usually find a good deal, and since I’m on a college student budget, that’s always nice.
I ended up getting a few more things than I had planned since I was only going to look for denim shorts. I also found some really cute wedges for around $30! That was definitely a steal for me!

The goods: white and grey v-necks, light green crew neck, purple shorts, floral skirt, denim shorts, and wedges. I’m very with how much I spent on all of it!
I also went to Whole Foods to buy some groceries for the week.
I’ve been craving a black bean salad, but I haven’t found any recipes that sounded really good to me. I wanted something summery that I could top beds of lettuce with. I decided to throw some things that sounded good to me, and it actually came out really good! I was very pleased with the end result.
Pineapple Cilantro Lime Black Bean Salad:
- 1 can black beans
- 1 can corn
- 1 small green bell pepper
- 1 small tomato
- part of an onion
- spinach
- 1 lime
- Pkg of Simply Organic Pineapple Cilantro dressing mix
Dice green bell pepper, tomato, and onion. Place black beans, corn, bell pepper, tomato, and onion in a bowl. Tear up some spinach (as much as you desire), and add to bowl. Dump pkg of pineapple cilantro mix into bowl, then add the juice of the lime. Mix together. Chill.

This picture does not do it justice. I’m really excited to have my family try it.
Moving on to some eats from today.
Breakfast:

Overnight oats: 1/3 c oats, 2 tsp chia seeds, 1/3 c Chobani greek yogurt, cinnamon, stevia, 1/4 c almond milk. Topped with strawberries, blueberries, a small peach, and 1 tbsp Almond butter.
Lunch:

1 egg on a Van’s whole wheat english muffin with spinach and ketchup. Side of 1/2 sweet potato, and cantaloupe. I didn’t finish the sweet potato because the cantaloupe and egg sandwich filled me up.
Snacks:

Organic Pink Lady apple with chocolate PB2

SF vanilla latte for a quick pick-me-up so I could keep being productive.
Dinner:

Pineapple cilantro lime black bean salad on top of iceburg lettuce and spinach. Side of carrots and jicama. If you have not tried jicama, please try it! I’m absolutely in LOVE with it!

Organic grapes for dessert.
Do you guys watch Extreme Makeover: Weightloss Edition? I LOVE that show!! I have almost cried in the last two episodes. It’s such an inspirational show! I also love Chris Powell. He’s such a nice guy, but so helpful. He can be my trainer if he would like to. Just saying.
Do you like morning or evening workouts?
I like morning because they give me a burst of energy, and I feel more awake.
