Hey! Hope everyone is doing well!
On Tuesday, the forecast showed that it would be snowing all day. I really wanted/needed to get in my 3 mile training run outside. I don’t really enjoy running around the indoor gym so when I woke up, I noticed that there wasn’t any snow yet. I threw on my running clothes and headed out. It was a nice, cool morning with an amazing breeze. I’m so glad that I live in Oklahoma where we have plenty of hills so I don’t even have to worry about not getting enough hill workouts. I ran 1.5 miles away from my apartment, then I turned around. On my way back, it started snowing!!! This was my first time ever to run outside while it was snowing. It was really awesome. I made it back in 29:35.
I got back around 7:30, and by the time I left for class at 9:50, my car was covered with snow! I arrived covered in snow! Luckily, they closed campus at noon, which also meant that our test scheduled for the afternoon was postponed. Thank you, snow.
I used my snow day to do some laundry, get some studying done, and I also made a really yummy meal!
Lindsay over at the Lean Green Bean made a pecan crusted salmon that looked amazing! I decided to use walnuts instead of pecans because walnuts have omega 3s that are good for your heart and brain. I love to add greens to my meals so I decided a salad with berries would compliment the salmon nicely. It was so good, and so easy to make. I think it took me 20 minutes tops to get this meal ready.
Alright, I’m off to get some more studying in. Gotta love pharmacy school!
