Exciting News! and a delicious soup

Happy Wednesday everyone! I hope you all enjoyed your weekend and week! I definitely did. It was such an amazing weekend! Saturday morning, my oldest brother and I went on a 5 mile run. We ran at the trail by my parents house. It was a great run, but it was super windy, so that slowed us down a bit. He’s part of a team that is running the Tulsa Route 66 marathon relay, and his leg is about 5 miles so he wanted to make sure he would be okay running on the road. After our run, we found donuts that my dad brought everyone! Ever since I can remember, my dad has always brought donuts on Saturday morning as a treat because they are my mom’s favorite! He is seriously such a sweet man, and I am so happy that I get to call him my dad. :)

Saturday was a huge day for me. I was anxiously awaiting a very important letter. I’m not sure if I have mentioned this on my blog before, but I was called for an interview to the college of pharmacy. I have applied a couple of times, but the other times I had been declined. It was okay, because it is so competitive especially to the school I was applying too. They only accept about 40 students for the Fall semester, and 35 for the Spring semester, and they always had over 200 applications for each semester. Anyways, I was excited, but I didn’t want to get my hopes up so I completely focused on my classes, and put that at the back of my mind. Saturday, the letter that I have been waiting for, finally arrived! I got my acceptance letter to the college of Pharmacy, and I couldn’t be more excited! :) I have been working so hard to be accepted, and it finally all paid off. I burst into tears when I read the letter. I just couldn’t believe it. I still can’t, and it probably won’t become real until orientation. I am so excited for this new journey that I am going to start in January 2013. God seriously works at the perfect time. I wanted to be accepted this semester, and He blessed me with this opportunity that I will forever be thankful for. My dream for as long as I can remember has been to become a pharmacist, and I can’t believe it’s finally coming true. I also found out my friend got accepted so we get to be in all the same classes!

Whenever I go grocery shopping, I usually like to look at all the soups to see if there are any that catch my eye. I like to keep a couple of cans of soup so I can throw together a quick meal. Being in college and having a job, being prepared with healthy foods helps me stay on track. I was looking at the soups at Sprouts, and I saw the Wolfgang Puck soups were on sale. I usually buy the Whole Foods brand of soup or Amy’s, but since these were on sale, I decided to give them a try. I bought the hearty vegetable soup and the signature tortilla.

I tried the signature tortilla soup, and I loved it! It had tons of veggies plus black beans which I love. I thought the soup tasted homemade, and I think next time I would add some tortilla strips for an added crunch.

I added broccoli to bulk it up a bit, and then I topped it with some shredded cheese. I had some Blue Diamond Almond Nut-thins, pepper jack flavor, on the side. I would definitely recommend this soup. I think it was about 140 calories per serving, and there were 2 servings in the can. I also loved that the ingredients were all organic, and it was gluten-free.
